No Bake Energy Bites
Over the past few months I’ve been trying to change my eating habits. I will admit I. Love. Food. When I was in high school and college it seemed simple to keep my average weight while eating whatever I wanted. Well let me tell you…times have changed. My girlfriend and I were on a rant about this very topic a few weeks ago. Both of us wondering why all of the sudden things (particularly the mid section for me) have changed so quickly. Bottom line: we are getting old! I still feel young, but I’m not the skinny girl I was in high school and my scale really isn’t broken (darn).
My problem isn’t working out. It’s going to dinner, drinks, happy hours and brunch or I guess you can call it being social. Oh yeah, and carbs! I can’t help it…you put a bowl of pasta in front of me and it’s going to be gone (all of it). I’ve started researching new diets that specifically target belly fat and I’ve found a handful of foods that are all the same throughout. Mainly trying to use the good fats or MUFAs.
Typically, I plan out my weeks worth of meals on Sundays and head to the grocery store. Planning a breakfast, lunch or dinner is easy but what about when you want a quick snack? These little bites of heaven solve that problem! Chocolate, peanut butter, honey? Sounds like it can’t possibly be healthy, but it isn’t that bad! Pop one in your mouth when you get that 2:30 feeling and get a little boost of energy for the rest of the day.
Ingredients:
- 1 cup (dry) oatmeal (old-fashioned)
- 2/3 cup toasted coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/2 cup chocolate chips
- 1/3 cup honey or maple syrup
- 1 tsp. vanilla extract
Mix all the ingredients together in a medium bowl. Refrigerate for about 30 mins and then roll into small bite sized balls. Store them in an airtight container for up to 1 week.
