Want to spice up a weeknight chicken dinner? Try stuffing a chicken breast with almost anything you could think of. This particular dish is one I make over and over…and over.
- 3 boneless skinless chicken breasts
- 1/2 cup chopped kalamata olives
- 1 red pepper – finely chopped
- 4 oz crumbled feta cheese
Heat oven to 350 degrees. Combine kalamata olives, chopped red pepper and feta into a small bowl. Put in the refrigerator while you prepare the chicken. Cut a slit through the thickest part of the chicken breasts. Be sure to make the slit deep enough to stuff the chicken. Divide the olive mixture evenly and stuff into the three chicken breasts. Secure with toothpicks. Brush extra virgin olive oil over top of chicken breasts and sprinkle with some salt and pepper or my favorite McCormicks Original Chicken Seasoning (tastes like a rotisserie chicken). Bake for about 30 minutes.
