While browsing Pinterest last week I found a recipe for baked tacos. I’ve never thought of baking tacos before, but why not give it a try. I decided to create my own recipe last night. Now most of the time the recipes I experiment with on my own turn out delicious, however there are those few times it’s a complete fail. Don’t worry…these are AMAZING!
- Ground turkey (Jennie-O taco seasoned)
- 1 white onion
- 1 jalepeno
- 1 can fire roasted tomatoes
- 8-10 hard taco shells
- 1 cup Mexican shredded cheese
- 1 tbs olive oil
Preheat oven to 400 degrees. In a large skillet heat olive oil. Finely chop white onion and jalapeno then saute for about 5 min. Add ground turkey to the pan and cook fully. Drain the grease off of the turkey completely and return to stove. Drain canned tomatoes and add to skillet. Line up taco shells in a large baking dish. Sprinkle 1/2 of cheese into bottom of each shell. Add meat mixture to shells and add rest of cheese to top. Bake 15-20 min.
