Banana Chip Oatmeal Cookies

Banana bread lovers beware! These banana oatmeal cookies just might be the most amazing bite you’ve ever put in your mouth. My boyfriend at the time even made the comment, “These are seriously the best cookies I’ve ever had!” Did I mention they are low fat?

Every time I buy bananas at the grocery store I usually end up eating one and then by the time I think to eat the others they have gone bad. Now I’m happy when they go bad because that means I get to make these delicious banana oatmeal cookies. Most of the ingredients are going to be items you keep on hand which makes these cookies cheap and healthy!

Ingredients:

  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 tbs unsalted butter (melted)
  • 1/2 cup plain applesauce
  • 1/2 cup brown sugar
  • 1 egg
  • 2 ripe bananas
  • 1/2 tsp vanilla
  • 2 cups quick oats
  • 1 cup butterscotch chips

Preheat oven to 350 degrees and line baking sheets with parchment paper (if you don’t have parchment paper it’s fine to put them directly on baking sheet, but if it is a dark pan knock back the cooking time by a minute and watch them). Combine dry ingredients in a small bowl: flour, baking powder, baking soda, salt, cinnamon. Mix butter, applesauce, brown sugar, egg, bananas and vanilla in large bowl until bananas are mashed. Add in dry ingredients, oats and butterscotch chips. Drop large spoonfuls on baking sheet and bake for 10-12 minutes.

Enjoy for the next 2 days because chances are they will be eaten that quick!
