A delicious winter recipe to make with my winter berry salad is a great meatloaf. We had meatloaf as a kid all the time. However, this is taking your mom’s meatloaf up a notch. It’s my absolute favorite meatloaf recipe because it’s lean and filled with some veggies. I normally don’t add spinach to my recipe, but when I made this for my boyfriend a few weeks ago we loved it with the spinach. When I told him what I was making he looked at me with the most perplexed look. I asked what was wrong, and he just said he hadn’t had meatloaf since he was about 3 years old! Haha.

If you have kids it’s an easy way to get them to eat healthy without knowing it! Just add some ketchup on top.

TURKEY MEATLOAF

Ingredients
  • Cooking spray
  • 1 tablespon olive oil
  • 1 small onion (diced)
  • 1 garlic clove (minced)
  • 1/2 red bell pepper (diced)
  • 2 cups spinach
  • 1 pound lean ground turkey
  • 1 large egg
  • 5 tablespoons dry bread crumbs (or almond flour to be Whole30 compliant)
  • 5 tablespoons ketchup
  • 1 1/2 teaspoons Worcestershire sauce
  • 1/4 teaspoon cayenne
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat oven 375 degrees. Spray large baking dish with cooking spray. In a small pan add olive oil, garlic, and onion. Sauté about 5 min. Add bell pepper and spinach. Sauté until spinach is wilted.
  2. In a large bowl or mixer (I use my Kitchen Aid mixer bc it’s way easier) combine turkey meat, egg, bread crumbs, ketchup, Worcestershire sauce, cayenne, salt, and pepper. Blend ingredients slightly. Add onion/spinach mixture and mix until well combined.
  3. Separate meat mixture into 3-4 small loafs. Or, place mixture into a 8-by-4 inch loaf pan. Bake meatloaf about 1 hour until sides are browned. Sometime I’ll turn the broiler on for a few minutes to get a better crisp outer edge. Let cool 10 min before serving.
