Next time you’re thinking about going out to brunch think again. These cranberry oatmeal bars are a delicious Sunday brunch treat, and you won’t feel guilty eating these scrumptious squares. I’ve made these on several occasions and they are always a hit. I actually just made them a few weeks ago for a lake weekend at my boyfriends parents house and his dad fell in love with these.
Ingredients:
Crust
- 1 cup flour
- 1 cup quick oats
- 1/2 cup brown sugar
- 1/2 cup plain applesauce
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp cinnamon
- 3 tbsp butter, melted
- 3 tbsp orange juice
Filling
- 6oz dried cranberries (I used 1/3 less sugar cranberries)
- 3/4 cup sour cream
- 1/2 cup granulated sugar
- 2 tbsp flour
- 1 tsp vanilla extract
- 1/2 tsp orange juice
- 1 large egg white, lightly beaten
Preheat oven to 325 degrees. Combine first 6 ingredients (dry ingredients) of the crust mixture and whisk together. Add melted butter and orange juice to flour mixture. Grease 8×8 pan and press oat mixture into bottom of baking dish. Keep 1/4 cup mixture for topping. *The oat mixture is quite sticky so don’t get discouraged if it doesn’t spread easily.
Next combine all filling ingredients in a medium bowl. Spread cranberry mixture over crust and then sprinkle remaining crust mixture over top. Bake for 40 minutes or until edges are golden. Cool completely and let everyone enjoy!
