You all probably think I’m crazy posting a cookie recipe when it’s the beginning of the year, and we are all on those New Year resolutions to eat better… Well…I’m not crazy. I’m realistic! Plus, let me fill you in on why these delicious banana chocolate chip oatmeal cookies won’t make you feel guilty.

With the new year comes a new season of The Bachelor. I’ve watched this guilty pleasure since it began (you can totally judge me lol). Over the last 5 years, my girlfriends and I can’t wait for “Girls Night” every Monday. I’m usually the host, and while I’m trying to eat healthier there is no way in hell I am giving up my wine and sweets on Monday nights!

That’s why these cookies are my “go-to” sweets recipe. There is only 2 tablespoons of butter, and you can substitute the flour for almond flour making it gluten free (I think?). Anyway, don’t let me convince you…try them for yourself. I promise they will be the best cookie you’ve ever eaten!

P.S. These cookies were one of my first blog posts! I originally made them with butterscotch chips, and if you aren’t dieting use both butterscotch and chocolate chips!

BANANA CHOCOLATE CHIP OATMEAL COOKIES

Ingredients
  • 1/2 cup flour (I use almond OR gluten free)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 tbs unsalted butter (melted)
  • 1/2 cup plain applesauce
  • 1/2 cup brown sugar (or coconut sugar)
  • 1 egg
  • 2 ripe bananas
  • 1/2 tsp vanilla
  • 2 cups quick oats
  • 1 cup chocolate chips
Instructions

Preheat oven to 350 degrees and line baking sheets with parchment paper (if you don’t have parchment paper it’s fine to put them directly on baking sheet, but if it is a dark pan knock back the cooking time by a minute and watch them).

Combine dry ingredients in a small bowl: flour, baking powder, baking soda, salt, cinnamon. Mix butter, applesauce, brown sugar, egg, bananas and vanilla in large bowl until bananas are mashed. Add in dry ingredients, oats and chocolate chips.

Drop large spoonfuls on baking sheet and bake for 12-15 minutes.
